ARE YOU OR SOMEONE YOU KNOW ONE OF THE 80 MILLION? THE PROBLEM You’re probably asking what in the heck I’m talking about. Kudarat was started as part of the answer to that question. Did you know that autoimmune diseases are collectively the number one disease condition in the US? For real. According to Dr. Michael Ash, there are now around 80 million people in North America that are dealing with autoimmune issues. The thing is, this is really a modern day epidemic. In 1900, one in 10,000 had some sort of autoimmune disease. Now, it’s one in 250! Let that sink in a minute. On top of that, there are three times as many women as men that are affected. Autoimmune diseases are the number one cause of death in women under the age of 65. And, once you develop one autoimmune disease, you’re likely to develop more than one. I personally dealt with a big ole pile of them. It’s like a domino effect – once you get one, more tend to follow. It definitely adds complexity to the equation when you’re trying to heal. For real. That’s not a typo. Here’s the bad news—almost no research has been done on most of the members of this horrible family. The vast majority of the research has focused on the specific gluten protein that is found in wheat, barley, and rye. Most of that work is tied to celiac disease. Happy Halloween I love Halloween, but maybe not for the reasons you might think. It’s more about being the gateway to the last quarter of the year, when fall transitions into winter (there’s nothing more peaceful than to watch the quietly falling snow by a warm fire!) and when we celebrate the holidays, family, and food. The crafts, yummy treats, and decorating. This time of year is very special. But…I also find Halloween and the ensuing holidays to be stressful. If you’re someone who is severely gluten intolerant, it can be daunting. People don’t understand why you not only won’t but can’t enjoy their massive spread at their Halloween party. They don’t understand why you’re asking what’s in the adult witches brew before you take a sip. They suggest that “just this once” should be okay and that I should “live a little”. Neighbors don’t understand why you’ve chosen to keep your porch light off and to not participate in Trick or Treating. No, dear neighbor, I’m not a jerk. I just cannot and will not serve up gluten laden (and this includes high fructose corn syrup—corn is a horrible gluten!) crap to your children or to my son. I’ll share a dark little secret, I recently (as in the last month), did “live a little”. I was out with family and I ate a sandwich at a farm-to-table restaurant. I purposely and consciously decided to eat that sandwich. And I paid a big price. I had an immediate reaction that lasted for three weeks. One sandwich, three weeks of hell.
